Antique French, hand operated, wooden, salami slicer, original cutting blade.
It is a true pleasure to bring this early salami slicer by the renowned French firm of Paul Hug & Cie before you today. Paul Hug & Cie operated from 33 – 37 Rue de Lyon Paris, toward the end of the 19th century and into the 20th century and were highly regarded for the quality of their cutting blades and saws. The blade has the ‘Paul Hug’ name and ‘Paris’ in clear text and the early symbol used for the business – a flexed, raised arm holding a flaming torch. All of this is on the blade surface protected by the wooden guard and is only seen when the unit is dismantled. While there are many items that we don’t clean (knowing that some clients prefer not to interfere with the patina of age), here, for ‘health and safety’ this slicer needed some time to address a stubborn exudate of previous salami’s that had passed through the cutting process. Therefore, the unit was stripped down and all surfaces scrubbed and given a good soaking with spirits to ensure cleanliness, before the application of a food safe, vegetable-based oil. Parts of the slicer that wouldn’t have direct contact with food have also had a coating of natural wax applied. Some thought has obviously gone into the construction, to ensure that the unit can be fixed to a bench as required and the disconnected for storage if necessary. While designed for slicing salami this unit could equally slice vegetables such as cucumber and even onions or tomatoes, but in my opinion, could just as easily would make a great decorative statement piece. The unit is approximately 440mm in length at the maximum and has a width of 115mm and a bench to top height of 140mm. The gap to fit the bench top, or similar, is maximum of 70mm and can be reduced to 50mm.
